Cajun pork
Preheat oven to 375
In small mixing bowl combine spice blend, mustard, and ghee. Brush the mixture evenly onto the pork tenderloin.
Place large cast iron skillet on the stovetop over medium high heat.
When the pan is hot, sear the tenderloin on both sides until lightly browned, about 2 minutes per side
Transfer the pan to the oven and roast the tenderloin for 15 to 20 minutes until the internal temperature reaches 145 degrees. Garnish with coarse sea salt before serving

Make Cajun spice blend:
2tablespooons dried oregano
2 tbsp paprika
1.5 tbsp granulated garlic
1.5 tbsp onion powder
1.5 tsp sea salt
1.5 tsp ground black pepper
1 tsp dried thyme leaves
.5 tsp cayenne pepper
